These are the best little pies I have ever tasted. In fact, the youngest ate all but two. The pies were supposed to be for breakfast in the morning for a couple of days. Needless to say, the youngest could not get enough of them and ate them all up right out of the oven. I recommended doubling this recipe if you have especially hearty eaters such as my yougest, and especially if it is something he likes. Thanx so much for posting, for it is hard to find good breakfast recipes.

  1. Cook sausage until done.
  2. Crumble, and then drain.
  3. Mix cheese and sausage.
  4. Sprinkle in pie shell.
  5. Lightly beat eggs in a bowl.
  6. Combine remaining ingredients and add to egg mixture.
  7. Pour in shell.
  8. Bake at 375 degrees for 40-45 minutes .
  9. Cool on rack 10 minutes.
