  • Cook pasta according to package directions and drain.
  • In a large nonstick skillet, melt butter and add hot pasta.
  • Crack eggs over pasta and scramble.
  • Sprinkle parmesan over pasta and serve, adding salt, pepper, or hot sauce.

  1. Just made this for breakfast this morning. EVERYONE LOVED it!! I used whole wheat Rotini and it was YUMMY!! My 6 year old and my 14 year old cleaned their plates! I can see many possibilities for variations. Next time I think I will try adding steamed Asparagus and mushrooms. Thanks for this unusual dish! Definitely a keeper!

I am a web producer and copy editor at an online newspaper. Many of my favorite foods are down-home Southern comfort food like my grandmother and mother made, but I also live in an ethnically diverse area and have been able to learn a lot about different styles of cooking. I especially like Asian, Mediterranean and Indian food. I'm working on learning to cook Indian food and I'm discovering that, like most traditional cuisines, it involves a lot of long complicated processes and a lot of intuition and background knowledge on the part of the cook.
