Yummy version of the sandwich! I cook for a small town cafe, so I usally make large batches at a time. So I'm listing the ingredients and you can size it as you like. {my amounts are guesstimates}

Directions

  1. heat bechamel and melt swiss into it, stirring gently. Keep warm.
  2. brown hashbrowns in hot skillet.
  3. heat turkey and fry eggs as you like {scrambled, fried, etc.}.
  4. place hashbrowns on plate, top with turkey and eggs.
  5. smother with sauce and garnish with tomatoes and bacon.
  6. serve with toast if wanted. ENJOY!
