"I love omelets but hate making them one at a time because I am at the stove while everyone is eating breakfast, then I end up eating after everyone is done. This solves that."

  • Spray an 8 inch x 8 inch glass dish with non-stick coating.
  • Place cooked bacon in the bottom of the dish.
  • Sprinkle cheese on top.
  • Pour beaten eggs over the top.
  • Bake for 25 to 30 minutes in a 350 degree Fahrenheit oven.
  • Cut into squares, serve.

  1. I cut the recipe in half as there is only me. I followed the directions as written, but maybe I shouldn't have since I cut the ingredients in half. The presentation was good, just like you see in the photo posted by ms_bold. The flavor was there...both the bacon and cheese came through. BUT....the mouth feel left a lot to be desired, it was so dry. It could be my fault as it was baked for the full length of time....or...it could be that the recipe needs the addition of a little cream mixed in with the eggs. I am not sure I will attempt it again, as I don't think this recipe really would save me time as there is only the one serving that is needed.
     
  2. I downsized this recipe to just one serving for myself and baked it in a round, flat ramekin. It was simple enough to repeat even on hectic mornings.
     
  3. Great breakfast idea! Made 3 small "omelettes" and topped them with some cilantro. So good!
     
  4. can u give measurements for a family of five??
     
  5. 1# of cheese is way too much. I decreased it by 1/2, and added 4 eggs, plus 1/4 cup of cream, and it turned out pretty good. I think next time I would make it without the bacon though. I like bacon, but not in this dish.
