My mom used to make this breakfast when we would go camping. It is an quick and easy one dish meal. Add some salsa and a flour tortilla and you have great breakfast burritos.

  1. Cook sausage and onions on medium heat until sausage is no longer pink.
  2. In a medium size bowl beat eggs (add two tablespoons of milk if desired) then add to sausage.
  3. Cook and scramble eggs until almost completely set.
  4. Add cheese and stir until eggs are done and cheese is melted.
