First off, I did not follow the recipe exactly. I popped my potatoes into the microwave and cooked them until tender.From start to finish - I used 1 well seasoned cast iron frying pan. I used 2 tblspoons of butter and added a little oil, to cook the onions and peppers.Then I added the cut up potatoes. For the eggs, I used the whole eggs with 2 Tblspoons of water, instead of the milk. I did not let this cook on the top of the stove, I cooked it in the oven with no problems. If you have a well seasoned cast iron pan, it works better than any other. This is an easy and yummy quick recipe.

I gave this 3 stars. My future hubby really liked this recipe. It was ok for me. My 4 yrs old newphew & 6 yrs old newphew did not like it. I changed the recipe slightly. I used regular onions, and white potatoes. My potatoes took far longer to cook then 4 minutes more like 15 minutes. Maybe the potatoes I used. I ended up adding more oil as my potatoes stuck alot. I put my dish in the oven as directed and my top of my frittata burned. Maybe my oven. We picked off all the burnt and ate the unburnt. There was really no flavor to this dish except for onion for my taste it needs more salt, pepper and some minced garlic. Overall this really didn't work for me but I will try it again with the exact ingredients on a lower shelf as I think it could be a great dish for breakfast. Thanks for posting. This recipe is very quick and easy & good except for the potatoes, which were not cooked well enough and in fact were mushy and turned grey. I think next time I make this, I will just cook potatoes separately - (fry them separate) and serve them alongside the frittata - or, leave them out altogehter. Thanks for the recipe, we will make it again.
