Delicious sausagey, cheesy casserole. Our family makes it for Christmas morning, but is great any time of year!

While the end result was very tasty, I did have some trouble with quantity of ingredients and serving size. The sausage was a turkey sausage which was cooked through then the mushrooms and green onions were added and when done the tomato was stirred in. I did use more bread than called for about twice as much. I think I would cut the milk back some as I had about 1/2 cup or so of the egg mixture that did not fit into the casserole dish used. This recipe was scaled by half and still got 4 very generous servings. Made for *PAC Spring 2009*

  1. In large bowl combine eggs, milk, mustard and salt. Pour half the bread in a buttered 13x9x2 casserole dish. Sprinkle with half the pepper, cheese and sausage and veggies. Sprinkle remaining bread, then remaining pepper, cheese, sausage and veggies. Pour egg mixture evenly over casserole. Bake uncovered for 1 hour, or until eggs are set. Tent with foil if top browns too quickly.
