- 10 flour tortillas
- 10 eggs
- 2 1⁄2 cups tater tots
- 2 cups cheese, shredded

Gravy ingredients
- 8 ounces vegetarian sausage patties
- 1⁄4 cup flour
- 3 cups milk
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon pepper
directions
- Cook the tater tots. (They can bake in the oven while you prepare the rest of the components.).
- Heat the sausage patties and crumble or chop them into coarse chunks.
- Combine milk and flour in a large bowl.
- Add salt, pepper, and sausage to the mixture and heat in a pan over medium-high heat, stirring occasionally, till it gains some thickness (about three to five minutes).
- Meanwhile, scramble the eggs in a separate pan.
- Divide eggs, tater tots, gravy, and cheese among the tortillas and roll them up.
