A filling breakfast option that's super-easy - I usually eat them for dinner!
- 1 lb sausage (I like to use lowfat chicken sausage)
- 1 large chopped onion
- 1 chopped green pepper
- 6 eggs
- 8 ounces salsa
- shredded cheese
- 4 -6 tortillas
- Brown sausage with onion and peppers
- Add eggs, salsa, and cheese – mixing after each.
- Dish into heated tortilla.
Excellent breakfast item, but actually had them for lunch. I used pork sausage in this recipe. I omitted the green pepper. Prepared as a participant in the April 2009 Pork Event in the Cooking Photo Forum.
