"While driving truck over-the-road, I used to stop in Moriarty, NM.   • In a skillet, over med-low heat, add sausage, onion, green pepper, potatoes and cover stirring occasionally.
  • do not let sausage cook crisp!
  • when potatoes are cooked soft, push to side of skillet and add eggs.
  • when eggs start to 'set', scramble mixture together.
  • cooking about 4 minutes.
  • put mixture in a bowl.
  • in a clean skillet, med-low heat, add 1 large flour tortilla.
  • Heat each side about 1 minute, DO NOT burn!
  • remove to a plate, add large spoonful egg mixture to center of tortilla, sprinkle with cheese.
  • Fold tortilla over mixture (folding directions are on tortilla wrapper).
  • Repeat.
  • Makes 4-5 burritos.
  • Enjoy.
  • Try w/ a little homemade salsa.
  • Also great to make ahead, wrap in aluminum foil & refrigerate.
  • Next morning place wrapped burritos in a pan & heat in oven a few minutes til warm.
  • Be creative when making these!

  1. I substituted bob evans spicy sausage for the churizo and more cheese.The whole family inhaled every bit of it and wanted more.A definate addition to my cookbook.
     
  2. This was excellent! The recipe called for chopped chorizos & we are fortunate to have Basque chorizos available. The only changes we would make next time is that for every potato used, use another chorizo & another egg. (ex: 3+3+3) Salt potatoes to taste as cooking. Thanks for the great recipe. We will pass it along to the rest of our family.
     
  3. Delicious! We did not use bell pepper or cheese, and used egg substitute (and almost double), along with Mexican chorizo. So yummy!
     
  4. We also used Bob Evans hot sausage instead of Chorizo. Honestly, this is one of the best things I've ever tasted. Everyone should give this one a try!

I did use my Food processer which is more like a Salad Shooter to do the potatoes, pepper, onions, and cheese... which made it go together fast. Thanks!

I have recently moved from Florida to Georgia. I love it up here and the weather is nicer, well for now since winter hasn't hit. Still haven't gone back on the road, I sure do miss truckin'. I don't cook much anymore, since my injury. The best cook in the world takes care of that; my dearest mother, Judy! My job is to find her recipes on the computer (ha ha she wont have anything to do with the computer) and I'm her official taste tester! Sometimes she catches me sneakin' another taste ''just to be sure'' LOL I love to crochet. Though I'm not queen of crochet-fancy, I can make some mean granny square afghans and cotton dish cloths:) Right now I'm on a project of crocheting wool hats to send to our troops. Ive got to speed it up since their Christmas boxes are going out Nov. 1st!!
