  • Mix all ingredients together in a large bowl.
  • Press into a foil lined 9 inch square pan.
  • Chill for 30 minutes.
  • Cut into 12 bars and wrap in plastic.
  • Store in the refrigerator.

  1. I made these yesterday for a bake sale, and I must admit that they were pretty delicious, not to mention simple to make and vegan to boot! I liked that it didn't even require a stovetop. I improvised quite a bit and added a lot of extras: toasted shredded coconut/ground walnut blend in place of flax seeds, minced dried apricots, raisins and craisins. I also essentially approximated the measurements for the PB and honey. These were very sweet but dense, and although there were no added refined sugars, I would probably refrain from making these too often for myself because they are just too delicious and I would eat them all. Definitely a recipe to keep.
     
  2. While I thought there was a bit too much flax seed in this, the kids sure didn't complain and ate the whole thing in a day. This was an easy, no bake snack that made it into my keeper file. I think next time I will cut down on the flax seed and maybe add a bit of almond slices. I also added a small bit of mini choc. chips pressed into the top. Made for Spring Pic A Chef 09.   3. These are a really nice snack to satisfy the sweet tooth without too much guilt! I made as written, but lloking forward to using other seeds (i.e. pumpkin or sunflower) and maybe chopped cranberries. Made for Spring 2008 PAC.

I livein beautiful Idaho, where the snow flies more often than not! So living in this cold climate, I do a lot of baking. I have been married to my wonderful, fun-loving husband for 12 years and we have 2 handsome, active boys. Right now I'm a stay at home mom, but in my past life I was an English teacher. My family and I LOVE the outdoors, especially the mountains. We backpack, flyfish, and hike as much as we can. I also love to garden, which I have found to be a challenge at times in this climate and elevation, but that hasn't stopped my yet. Maybe I will get lucky this year and Santa will build me a greenhouse or some cold frames!
