  • 236.59 ml corn flakes, crushed
  • 9.85 ml seasoned pepper
  • 1.23 ml salt
  • 4 egg whites
  • 59.14 ml water
  • 6 (680.38 g) orange roughy fillets
  • 59.14 ml all-purpose flour


  1. In a shallow dish, combine the cornflakes, seasoned pepper and salt.
  2. In another shallow dish, beat eff whites and water.
  3. Sprinkle fish with flour.
  4. Dip in egg white mixture, then coat with cornflake mixture.
  5. Place on a baking sheet coated with nonstick cooking spray.
  6. Bake at 425 for 9-11 minutes or until fish flakes easily with a fork.

This was pretty good, but somehow it just didn't do the roughy complete justice. I think the crust and egg white was a little tough.
