Bread sauce is the traditional British accompaniment to roast chicken, roast turkey or any roast game bird.

I'm a big fan of bread sauce ( well I am a Brit!), and couldn't resist trying this recipe because of the sour cream.
I halved the amount, as nobody else in the house will eat it ( fools!), and followed everything to the letter, except for the fact that when I studded my onion, I pinned a couple of bay leaves to it with the cloves ( essential in my book!).
This was a good sauce, with lovely flavour-a perfect match to our Sunday roast chicken,stuffing and roasted vegetables.Yum.

  1. Put the onion and milk in the top of a double boiler and bring very slowly to just below the boiling point.
  2. Remove the saucepan from the heat and allow it to stand for 20 minutes, so as to infuse the milk with the flavor of the onion and cloves.
  3. Discard the onion and add the breadcrumbs to the milk. Return to the heat, still using a double boiler.
  4. Stir until the sauce thickens.
  5. Then stir in the butter, nutmeg and sour cream.
  6. Add salt and pepper to taste.
