A great recipe, and what makes it better is that it is so easy and direct. I used diced tomatoes from the can (drained) and it came out just perfect, used chicken broth (which I think is necessary), and I doubled the garlic. A great authentic dish, may want to add some Latin spices but it's just perfect just the way it is!

If you like this, you should try it the way my mother used to make. Just use lots of onions, diced. Stir fry them until they are transparent and follow the rest of the recipe. I used to be the first to dig in, since I love the onions that float to the top! Brings back childhood memories...

I couldn't help myself - I did add a little chili powder while it was cooking. But this turned out to be the perfect accompaniment to one of my favorites here, Brazilian chicken with coconut milk sauce (http://www.recipezaar.com/Brazilian-Chicken-With-Coconut-Milk-Sauce-307015). Thank you to Meliska for recommending it!
I'll definitely be making this one again. MMmm!

So quick and easy to make TLu. We loved this flavorful dish. My picky dh ate most of it himself. Made exactly as written, it couldn't have been any better. I used chicken broth instead of water. It was the perfect accompaniment for entre (pork tenderloin). Thanks so much for sharing, I will be making this delicious rice again. :)

This was very good! It needed a touch more liquid, and time, but other than that I prepared it as the recipe states and was glad I did! Makes a great meal with Brazilian Chicken (http://www.recipezaar.com/Brazilian-Chicken-With-Coconut-Milk-Sauce-307015), and Brazilian Crock-Pot Beans (http://www.recipezaar.com/brazilian-crockpot-beans-363036)

That was pretty good. Even the kids liked it! I didn't have any long-grain, but short-grain rice worked fine, but was a little juicy... if you're going to substitute long for short I'd say leave out a little bit of the broth.

I prepared the recipe as written and then added 1 tsp chili powder and 1 4oz. can mild chopped green chilies. I used a microwave rice cooker, water instead of broth. This was very good. Thanks for posting!

Very good, made with organic veggie stock, and fresh minced garlic. Also used organic canned tomatoes. It's a great recipe because those that like it spicy can add cayenne or hot sauce on theirs and others can just have a good flavorful and healthy rice dish..Thanks.

This was a really good rice! It tasted like spanish rice without the spicy kick. My whole family really enjoyed it and I think I'll use this recipe again the next time I want spanish rice and add some spice to it. Thanks! Made for ZWT4 - Los Jefes de la Cocina.

I did this in my rice cooker so just threw everything in and used vegie stock. This was nice but the flavour is really mild & I would have liked it a bit more intense, I would probably add a little more garlic and use chicken stock for more flavour if I was to make this again. Made for ZWT 4.
