This is one tasty soup! Full of flavour with the right amount of 'kick' and very filling. Perfect for a cold evenings dinner, thanks for posting.

This soup was very yummy! I froze the leftover soup I had and it freezes very well. This will be a nice warm up for a cold football Sunday, thank you.

i had extra beer and wanted to use it up. this was excellent. i didn't use meat in this but i did add extra worcestershire sauce and hot sauce, for our taste. Very good and comforting on a cold damp day. leftovers tasted even better the next day too.

What a soup! And it has the 3 food groups (if you're from Wisconsin like me!) in it! I was given leftover brats from a neighbors party and I knew this was it! The flavor is fantastic! Nothing over powers and it blends quite well! This is so good, DH asked me to make extra brats next time we BBQ just so I can make this again! High praise indeed!

This soup is delicious. My family thoroughly enjoyed it and even went back for seconds! Thankfully, there was enough leftover for lunches, too. I used Killian's Red for the beer and grilled up 5 brats (and wished i had grilled more). I cheated and used diced hash browns for the potatoes--it turned out so yummy! Served (and sopped up the soup) with Asiago bread rolls. Thanks!

This was very good. I used low sodium chicken broth, dark beer, omitted the salt and doubled the bratwurst. I also was lazy and didn't puree the vegetables...we enjoyed it as a chunky soup. Thank you for posting.

This is a WINNER! I made it as directed, except I used more bratwurst and spices. It's much better than any beer and cheese soup I've eaten previously. :)

Wow, this is so delicious! I added extra brats too because I knew we'd want a meatier soup. I served it with cream biscuits and the huby and son gobbled it up. Definitely a keeper!

This is a very hearty soup. Husband and son both love it. I added extra brats (3 more). The men like thick ingredient filled soup or stew and this one is it! Very tasty!

This was pretty good. I'm a native Wisconsinite now living in San Francisco, & still haven't found my ultimate brat, beer & cheese soup, but this was close. I did not peel the potatoes in this, not needed...I used 18 oz. Newcastle, 3 c sharp cheddar cheese & 4 bratwurst (which were also cooked in 18 oz of Newcastle). It was a hit with everyone here! I'm going to try this again, I wasn't very happy with my bratwurst I got (it's harder to find out here) & then this may be my ultimate recipe. :)

It was just okay to me. A bit on a salty side - may be should've salted after added the cheese, not before.

SUPER YUMMY!! added more beer of course and more meat!! This was the first thing my boyfriend's parents ever ate that i made for a lunch, they are the type that don't have seconds, but guess what... they BOTH had seconds of this soup!!

I'm glad this recipe is posted. I made it from the Penzey's catalog - and now I can find it anytime. I didn't have any potatoes, so I used shell pasta and that worked well. I too would have liked the broth a little thicker, but thought it wasn't thick enough because of the missing potato starch. I browned the sliced brats first. The overall flavor was different - very delicious. And it uses ingredients usually found in the pantry. Thanks for posting this for safe keeping.

This was very good. I will definately make it again. I'm thinking it would also be wonderful with 1 or 2 mild New Mexico chilies simmered in it to add a little extra spice. And also add another brat to it. It was delicious.

This was good, but I like cheese based soups a little thicker.

We really liked this soup. I will definately be making it again. This time I didn't change anything, but I look forward to experimenting with different flavors of brats and beer. Thanks for sharing!

I made a pot of soup last night using this recipe with homemade brats and homemade stout. It turned out great! Thanks for a great treat!
