directions

  • in a small sautee pan add onions, peppercorns and butter. Sautee until somewhat soft.
  • Add 1/2 cup of brandy and reduce until its almost gone. It will catch fire!
  • Add the rest of the brandy, demi-glace, cream, and reduce until thick enough to pour over steak, salt to taste.
  • best with filet!

  1. I can’t eat onions so eliminated them and the sauce was fantastic. My husband loved it.
     
  2. I used this sauce for a beef tenderloin we bbq'd last night. I didn't have any onion but I used grated fresh garlic instead. I added some Better than Boullion beef base because I didn't have any demi-glace. Delicious flavor and consistency was perfect.
