I've tweaked the original recipe for years until it just doesn't get any better than this. The batter will last a month in the fridge so it's easy to make just a few muffins at a time.

  1. Pour boiling water over 1/2 of the bran cereal.
  2. Cream together butter, eggs, sugar, bananas.
  3. blend in bran mixture and buttermilk.
  4. Add flour, baking soda and salt.
  5. stir in dried fruit and nuts.
  6. Bake at 400 for 20 minutes.
