  1. Dissolve baking soda in milk.
  2. Mix all ingredients together and pour into a muffin tin, using either nonstick pan or paper liners.
  3. Bake 325F for 25 minute.

This muffin is super easy to make and has simple healthy ingredients but it is very dense: A no nonsense, all work and no play kinda muffin.

The first time I made this I used almond meal instead of corn meal and it was good but a little bland so I just made it again (in a loaf) with the almond meal but added chopped pecans, chopped prunes and a little cinnamon. Boy, is it good!!!

This is an excellent bran muffin recipe! A lot of times bran muffin recipies will call for two different types of bran cereal instead of just the one which makes it much more expensive. I also love the cornmeal which gives it an extra bit of crunch. I also used chocolate chips instead of the raisins to help calm my sugar craving!! Will definitely add to cookbook!
