  1. Season chops with salt and pepper.
  2. Heat oil in large skillet over medium-high heat.
  3. Brown chops, 3-4 minutes per side.
  4. In small bowl, stir together ginger root, orange juice, soy sauce, honey, mustard and garlic.
  5. Pour ginger mixture over chops.
  6. Simmer, covered, 8-10 minutes or until chops are tender.
  7. Place cooked chops on serving plate; spoon 1/2 of orange-mustard sauce over pork.
  8. Garnish with orange slices and watercress.
  9. Pass remaining sauce.

I omited the ginger because the flavor seems too strong. Otherwise it is a good pork dish with a savory sauce.

I omitted salt and pepper and cooked the pork chops on the barbecue to save some fat. I used homemade sodium-free soy sauce. I used 1 tbs of honey cause I know DH won't like it if it's too sweet. I guess it was perfect. But it was very strong with the ginger. I think 1 tsp of ginger would be enough for us. I boiled the sauce in a little saucepan around 7-10 minutes until thick enough.
