This is something I just threw together at the last minute. It was really good! Eat as much as you want since kale is a super food! ;-)

  1. Heat a large deep skillet over medium heat, add oil and onion cook stirring occasionally for 2 minutes. Add garlic and crushed red pepper flakes. Cook stirring occasionally for 1 minute. Add kale, corn, stock and salt and pepper to taste. Cook stirring occasionally for 10 minutes. Add lemon juice, stir and cook 1 more minute.
