This was very good! In fact, my picky brother loved it. I used a brown ale and also agree that it probably does not need to simmer 21/2 hours. My ribs were small but when they came out they were fall off the bone perfect.

I made these after watching the show and if I could give it more than five stars, I definitely would! I used Negra Modelo Dark Ale and served with rice and asparagus. I also found I did not need to simmer for 2 1/2 hours - I think it depends on the size of the ribs. Excellent recipe - worth the time!
