Brainless Banana Pancakes

- 1 cup flour
- 2 teaspoons baking powder
- 1 banana, mashed
- 1 1⁄4 cups soymilk
- 1 tablespoon artificial sweetener
- 1 slice fresh fruit (garnish)
directions
- In a large bowl, sift the flour and baking powder together.
- In a small bowl, mash the banana with a fork and add 1/4 cup of the milk, mixing together until there are no lumps.
- Add the banana, sweetener, and remaining milk to the dry mix and stir together until"just mixed".
- Portion out about 3/4 to 1 cup of the batter onto a hot non-stick pan or lightly oiled frying pan and cover with a lid.
- Let sit on medium heat until the center starts to bubble and become sturdy.
- Flip pancake over and cook other side until golden brown.
- Repeat process until all the batter is gone.
- Garnish with frest fruit and maple syrup.

I'm not a vegan, but I had run out of eggs and really wanted pancakes so I decided to give this recipe a try. I used 1/2 wheat flour, skim milk, 2 tbsp of sugar instead of artificial sweetener and also added cinnamon and a tbsp of cocoa powder. These were very sweet and filling. I got 14 small pancakes, so this recipe could really feed 3 people. All in all in was pretty good, it tasted kind of like banana bread and it wasn't too different from egg pancakes.

I serve these always, ESPECIALLY when my inlaws come, as they have VERY picky palettes, and everyone LOVES them and requests them again!! Cook on Med heat, or even a little lower if you're getting black outsides and gooey insides. That's with any pancake. And they are thick and filling, and moist bc of the banana. Very very good. Enjoy.

Mmmmmm, my favourite pancakes. I submitted a correction, but it hasn't been posted yet: the recipe should say 1 1/4 cup soy milk, not just 1/4 cup! Other than that, this is my favourite pancake recipe. Delicious if you use vanilla soy milk in place of some (I haven't tried replacing all of it with the vanilla variety, though) of the soy milk.

These pancakes were really really sweet! I used brown sugar instead of sweetener and added 1 tsp. of vanilla and a dash of cinnamon as well. They were almost too sweet to have with syrup...I will use less sugar next time. I also used about half whole wheat flour and a cup of milk, as the recipe specifies 1/4 cup only but then says to add "the rest". The batter was really chunky and hard to work with. Be careful, they burn really fast! Overall this was really yummy and fast and I will definitely make them again!
