These are great! I read that the chicken on a stick at the chinese buffets use thigh meat so I bought boneless chicken thigh meat. Super easy to make and you could easily marinate more than 1 pound of chicken with this recipe. I marinated my chicken for about 6 hours. I'll probably use less creamy peanut butter next time. My other suggestion is to be sure to leave some space on the skewers between the chicken meat. This will help them to cook more evenly.

The recipe was great and easy to follow. I though the peanut butter was a little overpowering. Maybe it was just me, next time I will use less.

This is one the best chicken recipes we have tasted. I will be making this once a week and for company for sure. I am really looking forward to trying the sauce on pork strips. Thanks so much for sharing!!

Hubby requested that I do "chicken on a stick" for his Asian-style birthday feast. This recipe worked really well for our party. I only marinated for about 6-7 hours instead of overnight, but the flavor was still great...at least I think so. They flew off the table, and I didn't get to taste even one skewer. Hubby gave them his seal of approval, though.
