If you like the darkness of Stout beer (I use Guinness) and bourbon together, here is the breakfast for you. Actually, the alcohol cooks off and just the interesting blend of sweet potatoes, bourbon and stout comes through. Great use for leftover sweet potatoes. Be sure to drench these in good quality maple syrup.
- Sift together the flour, baking powder and salt.
- Beat the egg yolks and mix them with the milk, stout, bourbon, yams, melted butter and spices.
- Beat the egg whites until they form soft peaks and fold them into the batter.
- Cook like ordinary waffles, following your waffle iron instructions.
- Pour on maple syrup.
Absolutely perfect as written! The Guinness and bourbon were subtle but noticeable (I used Jack Daniel's). Served with good Canadian Maple syrup. The beaten egg whites made the batter fluffy and light. I thought it may be too thick, but worked perfectly in my grandma's old 1930's Montgomery Ward waffle iron!
This is really awesome stuff. I can't have real alcohol being preggers, but a touch in my food is great to get the taste. Honestly there isn't much of the taste of it in the waffles, but the booze definitely kicked up the flavor and are really good. I had to up the cooking time on my waffle maker's instructions, but next time I'll up the heat too. I had mine with some fresh fruit, cream cheese and maple syrup.. I ate way too much though and now I feel sick from the gorging. Thanks so much for the recipe. I upped the amounts, but don't think I did so perfectly which may be why i had trouble getting the batter to cook through and crisp up on me. Next time I'll keep in mind that 1 smallish sweet potato gives about one cup cooked and then hopefully I'll be able to get the ratios correctly.
