Outstanding!!!!! I use Guinness beer and 1 LB of bacon. I slow cook all the ingredients (except the cilantro) in a crock pot without pre-soaking beans for around 8 hours. I now serve this everytime with my Acacia smoked brisket....all friends leave fat and happy!!! Thanks again for this recipe.
This was a big hit at a party the other night got 5 stars from everyone. I doubled the recipe and glad I did there was nothing left for anyone to take home. Have passed the recipe on to others already.
I've been searching for a good pinto bean recipe, and this is the one! I didn't have bacon, so I put in two smoked ham hocks (and didn't put in any other salt). I soaked the beans overnight, then cooked them in my slow cooker on high for about four hours before I put in the second batch of ingredients. Think it may have cooked for another hour before I put in the tomatoes and cilantro. One thing I did forget to do was decrease the liquid, since I was using the slow cooker. Next time, I may only put in three cups of chicken broth + the beer, and see if that works. We like our beans less "soupy" more "meaty."

This recipe was a big hit! The only thing I changed was I omitted the bacon and ham seasoning and added 1/2 lb. of smoked ham diced up.
