directions

  • Mix together 2 cups self raising flour.
  • 1/2 cup sugar.
  • 1 egg.
  • 1 cup water.
  • 1/2 teaspoon cinnamon
  • Mash banana and add to batter a mix in until smooth.
  • Add butter to frying pan (skillet), not too much though, let it get hot.
  • Place 1/4 cup of batter in pan and when it has bubbles on the top, flip it over and cook the other side.

  2. These banana pikelets had a nice flavor. I garnished them with a little powdered sugar. I enjoyed these pikelets but wasn't expecting them to be quite so dense. They were quick and easy to make, thank you for sharing your recipe.

  4. My Boo Boo Bananakins did not rise as much as the ones in the photo, that could be because I used a home made self rising flour. That didn't matter though, because the flavor was outstanding! I love the fact that they did not require any syrup or confectioners sugar for dusting. I will try making them with rice flour next time so that DH can have some too since he kept commenting on how wonderful they smelt as they were cooking. I had doubled the recipe so that I would have some to freeze, they were so enjoyed by the kids that there were no leftovers. This is a definite keeper for our house!
