Bombay Chutney

"You can make the Spiced Vinegar a day or two before you make the chutney. I have not made this yet. I guessed at the amount of jars needed as it was not stated in the recipe."

  • For the Spiced Vinegar:

  • Mix together all the spices and salt in a saucepan.
  • Add 1/2 cup vinegar and bring to a boil.
  • Boil for 2 minutes.
  • Add the remaining vinegar and boil for another 3 minutes.
  • Strain and cool.
  • For the Chutney:

  • Peel the apples and remove the cores.
  • Chop the apples with the onions and dates.
  • Mix the cayenne, ginger and mustard with a tablespoon of the spiced vinegar. Set aside.
  • Put the apples, onions and dates in a saucepan with the vinegar. Bring to a boil. Reduce heat and simmer until the mixture is soft.
  • Add the sugar and the cayenne mixture. Boil for 3 minutes, stirring constantly.
  • Pour into warm sterilized jars and seal.
  • Maybe be used after a couple of days.

Yikes!! My daughter had fun in PaintShop Pro!! What she can do with a picture. My husband and I live in the "bush" and hour from the closest town. Life here is quiet, yet so much more busy than when we lived in the "city". We grow our own veggies, several kinds of berries, and grow lots of hard neck organic garlic. We have 60 chickens, 4 dogs, 1 cat, 1 bird. Quite the menagerie. I make all my own breads, and sell them (along with the eggs).
