What a delicious salad for a luncheon meal - or even as a side salad - just so tasty!!

  1. Rinse and dry bok choy. Break up leaves and chop stalks. Chop green onion into medium-sized chunks,.
  2. Combine dressing ingredients. Boil for 2 minutes; allow to cool. Brown noodle mix items in a frying pan.
  3. Just before serving, combine the noodle mix and dressing with greens. Serve immediately.
  4. Makes 8 side-dish servings.
  5. NOTE: You can change this just a little bit by reducing the sugar by 2/3 and adding chopped orange segments.
