Char, I simply have to give you a five star rating on this recipe, because I have been cooking my spinach like this for years!! We love fresh cooked spinach in our house and have it often. Thank you for posting this, Char!
Great to be reminded of the basics for spinach, same goes for kale in my opinion, boiling is the best way to go. It removes the oxalates, which are poisonous in large quantities, and are why you have to be careful juicing spinach or kale, and why it's important to squeeze out the remaining water once you are done with the boiling. I never understand, however, why a recipe says to pat dry something in preparation that you are then going to put right back in the water for cooking. I skip that step!
I fill the pot with spinach and add about 1/2 cup water. Bring to a boil, cover, and let boil until tender. I do beet greens the same way. I do love the salt and butter. I had never tried that before.
