Boiled Radishes

"These taste a lot like new potatoes. The boiling takes the bite and heat out of them. NOTE: I have tried to cook them with meat in a crockpot like a roast and they do not turn out near as well."

  • 1 (8 ounce) bag radishes (or whatever size bag or bunch you want)
  • 2 cups water (enough to cover radishes)

directions

  • Trim ends and bad spots off Radishes.
  • Boil radishes in water until fork tender. Best served with butter and a little parsley.

  1. It is amazing how closely these resemble new potatoes. The radish taste really does get boiled away. The texture is not quite the same (as another reviewer noted, they are a bit watery), but they are a great substitute for someone who has removed potatoes from their diet. They even looked like new red potatoes, because the bright red color gets boiled off. Thanks for the cool low-carb idea!

  3. OK, this is so wierd because they really did come out a lot like creamer potatoes. I never would have thought to do this in a million years so way to go Metami! The only reason I did not give them 5 stars is that they were really watery. I don't know if I needed to drain them better or maybe try to squeeze some more water out? If anyone has any suggestions I'd love to hear them. Great recipe!!
