Bobby Flay's Beer-Simmered Bratwurst

These are wonderful bratwursts! They are always a big hit with our guests. I always make these with Bobby Flay's German Potato Salad. Great for a summer party.

Ingredients Nutrition

  • 3 large onions, peeled & thinly sliced
  • 2 garlic cloves, crushed
  • 1360.77 g bratwursts, pricked with a fork (Bobby uses pre-cooked brats, but we get more flavor out of using uncooked, Johnsonville is our favor)
  • 6 (2041.16 g) bottle dark beer (we always use Sierra Nevada Pale Ale)
  • 473.18 ml water
  • 4.92 ml coriander seed
  • 4.92 ml caraway seed
  • 4.92 ml mustard seeds
  • 1 piece fresh ginger, peeled & chopped (1-inch)
  • bun, of your choice (or not)
  • German mustard, of your choice (we prefer Honey Spice mustard)
  • Other garnishes

  • sauerkraut (optional) or pickles (optional) or pickled eggs (optional) or pickled beets, chopped (optional) or sauteed onion (optional)


  1. Arrange onion slices and garlic along the bottom of a medium stockpot.
  2. Place bratwurst on top and then add the beer, water, coriander, caraway, mustard seeds and ginger.
  3. Fire up the grill.
  4. Bring to a simmer over the grill grates or on a burner.
  5. We do it on the stove top, but you still need the grill to finish cooking the brats.
  6. Simmer the sausage in the mixture for about 10 minutes.
  7. Remove the pan from the heat and let the bratwursts sit in the liquid for 10 more minutes.
  8. Remove the sausages with tongs onto a platter.
  9. Place the bratwursts on the grill and grill until cooked through (about 10-15 minutes).

Very delicious. Since I was only making for me and my bf I didn't add the water, just used a beer called Taurino. Used uncooked brats and simmered them in the mix for about 15 minutes then grilled them in my cast iron skillet until browned, then popped them right back into the mix. Came out nice and juicy. Toasted some hot dog buns and served them topped with onions, sourkraut and mustard. Thank you for posting! will make again.

EXCELLENT! I had never made Brats before and decided to have a go at it for a college football game we were hosting at our house. So glad I did!! SUPER EASY!! We grilled them after boiling and they turned out PERFECT! Everyone enjoyed! Thanks for posting!

I made this for dinner tonight to make my hubby smile. He just loves brats; I can usually do without them. Tonight, however, even I ate a whole bratwurst. I used the uncooked Johnsonville brats (5 of them) and 4 bottles of JW Dundee's Honey Brown Lager. I didn't change the amounts of the spices, but only used 2 onions instead of 3. I actually simmered the brats, grilled them, then simmered them again and very briefly grilled them a second time, while I was waiting on a non-cooperative side dish. They came out tender and juicy, without some of the greasiness we usually get with a plain grilled bratwurst. Hubby said he wouldn't want them this way every time, but they were a nice change of pace.
