Bob Murray's Top Secret Boiled Fruitcake

This is the cake I use to make my Christmas cake. It was given to my mother who didn't know it was a secret. She gave it to everyone, much to Bob's disgust. Oops. Depending on my mood, I add nuts and cherries, etc and use a larger tin.

Ingredients:

Yield: 1 20 cm c ...

• 500 g cake fruit
• 1 teaspoon cinnamon
• 250 g margarine
• ½ teaspoon nutmeg
• 1 ½ cups brown sugar
• 2 cups water
• 3 cups flour
• 1 teaspoon bicarbonate of soda
• ½ teaspoon baking powder

Directions:

1. Boil together for 3 minutes the first six ingredients.
2. Cool till lukewarm.
3. Stir into the mixture: flour, bicarb of soda and baking powder.
4. Bake in a 20 cm (8inch) deep tin for 2 hours at 300F/150°C.
