From Emeril Lagasse Emeril Live show, this has gotten great reviews! This is served at the Marley Cafe in Orlando, Florida. This is traditionally served with cucumber sauce and yucca fries(you can sub french fries). I have given the recipe for the sauce. Prep time includes marinating overnight. This is also popular in Florida.
- 1 onion, finely chopped
- 118.29 ml finely chopped scallion
- 9.85 ml fresh thyme leaves
- 4.92 ml salt
- 9.85 ml sugar
- 4.92 ml ground allspice
- 2.46 ml ground nutmeg
- 2.46 ml ground cinnamon
- 1 hot pepper, finely ground (or 2 Scotch bonnet peppers)
- 4.92 ml ground black pepper
- 44.37 ml soy sauce
- 14.79 ml cooking oil
- 14.79 ml apple cider vinegar
- 907.18 g chicken breasts, dice 1/2-inch thick
- 12 wooden skewers, soaked in water for 2 hours
CUCUMBER DIPPING SAUCE
- 680.38 g cucumbers
- 177.44-236.59 ml sour cream
- 177.44-236.59 ml mayonnaise
- 28.39 ml cider vinegar
- 14.79 ml salt (or less to taste)
- 0.25 ml cayenne pepper
- 14.79 ml Dijon mustard
- 14.79 ml chopped garlic
- Mix together onion, scallion, thyme, salt, sugar, allspice, nutmeg, cinnamon, hot pepper, black pepper, soy sauce, oil and vinegar. These ingredients can also be combined in a food processor.
- Skewer 2 1/2 ounces of chicken onto each skewer(about 4 pieces). Place the skewers in a shallow baking dish and cover with the marinade. Marinate in the refrigerator overnight.
- Place the skewers onto a hot grill and grill until done, about 2 to 3 minutes per side.
- For the dipping sauce:.
- Peel and seed cucumbers and roughly chop. Add sour cream and mayonnaise. Add rest of ingredients and puree in a blender. Yield: about 1 1/2 quarts.
Great chicken recipe. I really liked the spices for the chicken. They were a little spicy but not as strong as other jerk recipes. I could not find bonnet peppers and substituted a jalapeno pepper in the marinade. Marinating the chicken overnight made the chicken so tender that you could cut it with a fork. The cucumber dipping sauce was a hit. However, next time I will be making half the recipe because I had a lot left over. Thanks for posting this great recipe. Made for ZWT5.
The kebabs were so good. I had them marinating overnight and all I can say is that the meat was very juice and tender and lip-smackingly spicy. The cucumber dipping sauce was a delicious cool accompaniment.
Oh, so yummy!!! I put this recipe together in the morning and grilled them that evening, so they marinated about 8 hours. I also couldn't find scotch bonnet peppers and had to sub in jalapeno. Loved the flavor of the chicken, it had spice without being too spicy, lol, if that makes sense. I halved the cucumber sauce and it still made quite a bit.
