Found this in a library book, The best of Country Cooking. Im posting here for safe keeping. I thought this would be cute to serve around the holidays.
- 18 large marshmallows
- 3⁄4 cup sugar
- 3⁄4 cup water
- 1⁄3 cup red-hot candies
- 6 small tart apples, peeled, cored, and halved
- 1 teaspoon lemon juice
- In a large skillet, combine marshmallows, sugar, water, and candies.
- Cook over medium heat, stirring occasionally, until candies are dissolved.
- Add apples.
- Simmer, uncovered, for 20 minutes or until apples are tender, gently turning once. Add lemon juice.
Made as directed and the kids absolutely inhaled them. As the mixture cools, it thickens a great deal without getting hard. A fun fall dessert with the flavor of candied apples without all of the work, sweeter than baked or fried apples. Thanks for sharing the recipe! Made for PAC Fall 2008.
