Simple to prepare and delicious....nice and rich. Mine thickened in less than 1 min. The butter is the key....YUM!

It couldn't have been easier! I could have used a little more lemon juice and a little less sugar, but DH thought it was fine as is. The silky and smooth texture made this a decadent topping for New York Cheesecake.
This is a standby in our house. DH loves blueberries so we make a lot of it. Have even forgotten the butter and it still works out. When I haven't had fresh lemon juice have substitute frozen lemonade.
I used saskatoons. I didn't have quite enough lemon juice so I added 1 tablespoon of Amaretto which accented the almond flavour of the saskatoons nicely.
Really great; I made it just as written and it was fantastic. I am making it for the second time this weekend.
This recipe was soooo easy. I used regular lemon juice. Next time I'll use a little less. The lemon just was a little over powering. Still, all gone!!!!! I used it on pancakes.
