I know there are a ton of blueberry sauce recipes on the zaar. However, this one is sweetened with honey (which my system tolerates better than white sugar) and uses a minimum of ingredients. It's also really easy and keep pretty well. It doubles well.
- 2 cups frozen blueberries (do not thaw)
- 1⁄4 cup honey
- 1 -2 tablespoon lemon juice
- 1 teaspoon lemon zest
- Combine ingredients in a medium heavy saucepan.
- Bring to a boil. Turn down heat to simmer. Simmer until thickened. About 15 minutes. Sauce will continue to thicken as it cools.
Had them with pancakes and I liked it becoz of honey.
