Blueberry or Raspberry Butter

"Saw this recipe made on Rebecca's Garden and it looked good (and of course easy). I haven't made it yet but will try it soon. Most any fruit can be substituted so start experimenting. This is great on toast, bagels, waffles or any plain pastry."

  1. Great stuff! It's also super easy!

  2. What a fun, easy way to add a gourmet touch to breakfast or brunch! I made the blueberry version and served it with Recipe #6653 and they went really well together. I had some leftover so the next day I had it on rye toast, also a treat! I felt it was a bit watery with only 1/8 cup powdered sugar so I added some more until it was a more spreadable consistency. It is still soft after refrigeration so don't worry about needing to set it out early before serving it. It spreads beautifully right from the refrigerator. :)

  3. Made this using strawberries and it is a nice and sweet alternative to just butter. Used this on a toasted bagel and on some banana bread and it was delicious. Very simple to make. I will definitely do this again. Thanks for posting.

  4. I did this in the food processor using strawberries. It never got what I would call "smooth and fluffy". Allowing it to chill overnight was a must. This was very good on KITTENCAL's The Best Jumbo Blueberry (or Strawberry) Muffins #117040.

  5. Ducky, glad you saw this on Rebecca's Garden!!! I doubled this using 1 stick of butter, 1/4 cup sugar and 2/3 cup of freshed chopped peaches from my backyard. Yummy on cinnamon toast! So easy and nice to have in the refrigerator. Going to make some now with blueberries for DS and BF and frozen strawberries for DD#3.. Thanks for a great morning treat!
