Blueberry (Or Chocolate Chip) Mini Muffins

"This is my go-to recipe for blueberry or chocolate chip muffins. These are soft and moist and stay that way even when cooled. I think they are the perfect sweetness, too. An endless variety of mix-ins can be used. (Recipe is scaled down for 16-18 mini or 5-6 standard muffins.)"

  1. Just for everyone's info, 3/8 of a cup is equal to 6 Tbsp., and 1/8 cup is equal to 2 Tbsp. Still working on the recipe, but I thought this might be helpful.

  2. Quick, Easy and delicious. I did add cinnamon and sugar sprinkled over the top before baking, however I wouldn't make any other changes.

  3. I followed this recipe exactly, only difference being I substituted 1% milk for the skim milk the recipe calls for. I used blueberries instead of chocolate, and although the muffins turned out as expected, I personally found them to taste a little bland. They definitely need to be sweeter. Maybe if you use chocolate this recipe will work fine, but for blueberries this recipe is just too plain. Wouldn’t make it again, and I followed instructions exactly.

  4. Made these exactly as written and they came out perfect! I’ve been buying the store-bought mini muffins for my kid and they’re full of preservatives. Now I don’t have to.. Thank you!

  5. These are amazing and so easy! I added extra blueberries by accident and used frozen blueberries instead of fresh - they still came out so delicious. :)

Tweaks

  1. Awesome! I halved the recipe, and used craisins instead of blueberries. Next time I'll try using fresh fruit (more juicy, better for muffins, I was just using up what I had around), but they were great! Boyfriend would give it two thumbs up, but he's busy eating muffins.

I am fascinated with all things cooking- and baking-related, especially technique. I'm a kitchen gadget junkie, spending an hour at the kitchenware store without realizing it. I also like to read food blogs which have colorful pictures and accompanying recipes. I'm addicted to Recipezaar, hehehe. I check the homepage everyday to see the "Photo of the Day" and the new photos and recipes posted. I also enjoy reading the community forums, especially "Cooking Photos" and "Breads & Baking"; the latter is how I came to adopt my new pet---my Red Sea sourdough starter. Found this funny poem on the forums, true author unknown: I didn't have potatoes, so I substituted rice. I didn't have paprika, so I used another spice. I didn't have tomato sauce, so I used tomato paste; A whole can, not a half can - I don't believe in waste. A friend gave me the recipe; she said you couldn't beat it. There must be something wrong with her, I couldn't even eat it!
