Directions

  1. Preheat oven to 350 degrees.
  2. In a saucepan, combine sugar and cornstarch;gradually whisk in water and lemon juice until smooth;bring to a boil, stirring constantly. Stir in blueberries; cook and stir for two minutes longer or until thickened and bubbly; remove from the heat and set aside.
  3. In a bowl, combine the dry cake mix and one cup of the oats; cut in six tablespoons butter until crumbly. Set aside one cup of crumb mixture for topping and stir egg into remaining crumb mixture.
  4. Press into a 13" x 9" x 2" baking dish coated with non-fat cooking spray; spread blueberry mixture to within 1/4 inch of edges.
  5. Combine the brown sugar, remaining oats and reserved crumb mixture; cut in remaining butter until crumbly; sprinkle over top of blueberry mixture.
  6. Bake at 350 degrees for 30-35 minutes or until golden brown. These are best served warm (with vanilla frozen yogurt on top!) but if you want the bars to stick together it's best to cool before cutting them. Enjoy!

When it comes to blueberry oat squares. These are by far the world's greatest. Even if they were cut in triangles, they'd still get 5 stars. Seriously though, they are good.

These were great! I love blueberries, so I may try making them with double the filling next time. The consistancy was really good as is, though. Thanks for the recipe. I'm sure I will make these often.

I took these to work today and they were a great hit. The blueberries were from the farmer's market and as fresh as they come. I did find I needed to use quite a bit more water for the blueberry filling (more like 1/2 to 2/3 C) to acquire a mixture that wasn't glue-like. What people especially liked was the pop of the blueberries when the bars are eaten. The very brief cooking time on the stovetop was key to that terrific "mouthfeel." I recommend these highly!
