  • Preheat oven to 450°F (230°C). Spray a 12-muffin tin; set aside.
  • In a large bowl, mix oat bran, brown sugar and baking powder. Make a well in the center of the mixture.
  • In another bowl, beat egg whites until foamy. Mix the milk & vinegar together and stir it and the molasses into the egg whites. Add your wet ingredients to oat bran mixture and stir just until moistened. Fold in applesauce and blueberries.
  • Spoon batter into muffin tin, filling each cup to the top. Bake until golden brown, 10 to 12 minutes. Remove from oven and cool 5 minutes. Remove muffins from tin and cool on a wire rack.

I live in PA and work in the billing dept. for a local health center. For fun I hang out with friends, and of course cook! I love to have fun cooking but am very inexperianced cook. Never get a chance due to my Dad working second shift and Mom makes his meal mid-day while I'm working. I love to read, play the piano and am learning guitar.
