Directions

  1. Heat oven to 400°F.
  2. Combine safflower oil, brown sugar, flour, baking powder, baking soda and salt.
  3. Add buttermilk, egg, oat bran, oatmeal and wheat germ.
  4. Mix lightly with a wooden spoon to moisten.
  5. Stir in blueberries.
  6. Fill paper-lined tins 3/4 full with batter.
  7. Bake at 400°F for 20 minutes, or until toothpick inserted into center comes out dry.
  8. Remove muffins from tins& cool on wire racks.

This made 14 muffins. Quite tasty. I think I would add some vanlla next time and maybe reduce the blueberries to 1 cup. Also, at 400F these muffins are done in 15 minutes.
