  1. In a large bowl, combine the first 7 ingredients. Set aside and preheat the oven to 400°F.
  2. In a smaller bowl, whisk egg. Add the yogurt, juice,applesauce and lemon extract to the egss and mix well.
  3. Add egg mixture to the dry ingredients and blend together. Gently stir in blueberries into the muffin batter,.
