Blueberry Honey Jam

"Honey adds a slightly different flavour to this beautiful and easy jam. Fresh or frozen berries may be used. Adapted from Topp and Howard."

directions

  • Place blueberries, sugar, honey and lemon juice into a non-reactive saucepan and bring to a boil, stirring.
  • Boil hard for 2 minutes, stirring constantly.
  • Take off the heat, stir in the pectin and ladle into hot sterilized jars.
  • Seal and process in a hot water bath for 10 minutes.
  • Place hot jars on a towel on your counter and let cool overnight. Check seals.

  1. I used only half the amount of sugar (but all the honey) and it turned out yummy! I am now kicking myself because I canned all of it thinking one of the jars usually doesn't seal. Can you imagine how disappointed I am that every last one sealed???? I'm betting by morning my hubbie will have opned a jar anyway. He really liked it! Thanks for sharing!
     
  2. I thought this was a great recipe! I used about 6 cups of crushed berries, a little less than 4 cups of sugar, roughly a cup of honey, and lime juice (it was all I had) and a whole box of pectin. I did blend my berries to crush them which I had never done before and I don't think I'll ever do it again b/c it didn't fully thicken like it usually does. But it tastes delicious regardless! Thanks for a tasty recipe :)
     
  3. I cut the sugar in 1/2 and barely used a cup of honey {didn't realize I had run so low}. This had a beautiful flavor - a lovely treat.

I was born in a small Canadian prairie town but was raised in the city. Country living appeals to me more and more and now I think I have the best of both worlds, living just outside the city but within a 30 minute drive from downtown. I enjoy the wildlife I see out my kitchen window and my vegetable and flower gardens in the summer. And I love cooking with the produce from my garden, although there always seems to be too much at once. Learning to can became a necessity with all those beautiful vegetables and I now really enjoy making pickles, relish, salsa, jams and whatever else strikes my fancy. I have 2 teenage sons and cooking to suit everyone's taste is always a challenge.
