I was on a business trip and as a team building exercise, we took a cooking class and made this dessert, it was incredible. You can use any type of fruit.

  1. Preheat oven to 375 degrees and butter bottom and sides of a baking dish. Zest lemon. Toss blueberries, 2 tablespoons sugar, zext and cornstarch in a bowl and place in bottom of baking dish.
  2. In seperate bowl, mix remaining sugar, flour, baking powder and salt. Add eggs and mix with fingers. Sprinkle over fruit then pour melted butter evenly over the crumble mixture.
  3. Place in center of oven and bake for 30 minutes until fruit bubbles and the crumble is a golden brown. Serve warm with a dallop of creme fraiche.

Excellent! The lemon zest was a wonderful addition to the taste. It seemed like a huge quantity of butter to be drizzling on the top. I thought it would be very rich but it turned out just fine. I would definitely make again and use this topping with other fruits as well.

Love this recipe, even if you don't care for blueberries you will love this. Lemon zest added that touch of freshness that brought it to the top! Thanks for a great recipe. I will add this to my favorite recipes...
