Blueberry Drop Biscuits

ingredients
- 1 cup flour
- 1⁄2 teaspoon salt
- 1 1⁄2 teaspoons baking powder
- 2 tablespoons butter
- 1⁄2 cup milk
- 1⁄2 cup fresh blueberries
directions
- Combine flour, salt and baking powder.
- Work in the butter with a fork, or a pastry blender.
- Add milk, stirring just to moisten.
- Carefully fold in the blueberries.
- Drop by tablespoon onto greased baking sheet.
- Bake at 375° for 12 to 14 minutes or until
- lightly browned.

This was pretty good using soymilk and vegan butter (earthbalance). Next time I will definitely add some sugar or other sweetener as the blueberries didn't quite make it sweet enough. Also, I definitely did not get 12 biscuits out this recipe - it only made 4 good sized biscuits for us. Thanks for posting. It came together and cooked in no time at all.

I love to make Italian and Mexican food the best, followed by Chinese and last, but by far the least, good old American food! How can you beat chicken fried steak, mashed potatoes and gravy?? I love to find several recipes and put my own spin on them and create a new recipe.
