  1. Preheat oven to 350 F (180C).
  2. Combine flour, sugar, baking powder, butter, egg whites, and vanilla. Mix well. Press onto bottom of 10 inch springform pan.
  3. Layer blueberries on base.
  4. In large bowl combine flour, yogurt, egg, sugar, vanilla, and lemon rind. Mix until smooth.
  5. Pour over blueberries.
  6. Bake 60-70 minutes or until cake is firm and golden.

The crust was very dense and hard to cut, making it impossible to eat without splattering oneself with blueberry goop, until I got the knives out. It did not want to set up and so took about 20 minutes longer to bake. I keep a thermometer in my oven because I bake alot of bread so the temp was not the problem. We ate 2 pieces and threw the rest away.

Tasty...but wasn't a big hit...perhaps too much blueberry (recipe did not state quantity of frozen blueberries;....wasn't a big hit with the Mr. Kids were nice about it, but didn't have seconds...hmm??
