Blueberry Breakfast Bars

These are so good! I got the recipe off a now defunct message board and have made them many times. They are excellent for breakfast or for any time of day. I am guessing on the amount of servings.

  1. Cream sugar and butter; add eggs and vanilla.
  2. Beat well.
  3. Add flour and baking powder.
  4. Stir until blended.
  5. Spread half of the mixture onto an ungreased 15x10 baking pan.
  6. Carefully top with pie filling.
  7. Drop remaining dough on top by teaspoonfuls.
  8. Bake at 350 degrees for 45 minutes or until golden brown.
  9. Do not underbake.
  10. Combine powdered sugar, melted butter and lemon juice and drizzle over warm bars.

Well, they were just a tad more coffeecake-like than I was expecting, but they didn't lack for flavor. I used homemade blueberry pie filling, but otherwise followed recipe as it was written.

I used my KitchenAid mixer to blend this. I found the dough to be very sticky trying to spread on the pan. I ended up using sandwhich bags that I sprayed with non-stick spray. Next time I think it would be easier for me if I chilled the dough prior. Tastes like this came from a bakery! March 10, 2008

We loved these!!!! I made them when our family was in town and they were a hit! They were very easy and I know I will use this recipe again and again.
