Blueberry Batter Cake

"Favorite recipe from my childhood. Wonderful with fresh Michigan blueberries. The cooking directions might seem a little unusual, but the end result is a very crispy topped cake. Trust me, it's worth it!!!"

  • Line a well greased 8x8x2 pan with berries.
  • Sprinkle with lemon juice.
  • Cream together 1/2 cup sugar and butter.
  • Add milk, flour, baking powder and salt.
  • Pour over berries.
  • Combine sugar, cornstarch and salt.
  • Sprinkle evenly over top of cake.
  • Pour boiling water over all.
  • Bake 45 minute to 1 hour at 375degrees until light brown.
  • ****You can use any fruit. Peaches and strawberries are also WONDERFUL.
