This came from a heart healthy mag I get - it is also low in fat with only 2 grams per muffin

Directions

  1. Preheat oven to 400 degrees. Lightly spray 12 cup muffin tin.
  2. In a large bowl combine flours, wheat germ, brown sugar, baking powder, salt, cinnamon and nutmeg, stirring well.
  3. In a small bowl mash banana and add remaining ingredients except blueberries. Whisk until well blended. Make a well in the center of the flour mixture. Pour the banana mixture into the well and stir just till moist. Mixture will be lumpy. Gently fold in blueberries. Pour batter into muffin tins and bake for 15 minutes or until toothpick comes out clean.

Made this recipe using exact ingredients as written. I threw the entire batch in the garbage. The teaspoon of salt and 1/2 teaspoon of nutmeg over powered the other ingredients. Not sure if the quantity of salt is a type-o but it was overwhelming to say the least.

I used this as a basis, but made some changes. Used 1.5 cups white flour plus .5 cup of oatmeal. Didn't have orange juice, so I used milk. Added all the blueberries I had frozen, probably 1.3 cup. Made 10 muffins. Cooked for 17 minutes. Enjoyed them!
