  • 2 cups frozen blueberries
  • 1 cup pineapple juice
  • 1 cup plain soy yogurt
  • 2 tablespoons raw almonds
  • 14 teaspoon almond extract
  • 1 teaspoon stevia powder (optional)

  • Combine everything in a blender and blend at high speed until very smooth and creamy.

  1. Great smoothie! I love how the pineapple really adds a nice sweetness, even if you don't use the stevia (I skipped it.) All the flavors work together, and if you look at my photo, you'll see that even my cat was tempted by it. She loves blueberries.
     
  2. After a full morning of making PAC recipes, I needed a quick and healthy Pick-Me-Up. This was one of my chosen recipes and it did the trick! Loved the combination of blueberries with pineapple juice; the hint of almond was a nice addition. I enjoy my smoothies slightly thinner so I added one more cup of pineapple juice to the mix. Made for Spring PAC 2010.
